Mulberry Pear

Made with 100% Certified Organic Bartlett Pears and Mulberries from the Harker Homestead

This “Amarone/Port Style Wine”  is made from farm grown Organic Mulberries and Bartlett Pears.  The Mulberries are picked mid to late June and dried out in the green house to extract and concentrate the sugars and acidity.  The dried Mulberries are then added to neutral grain alcohol as the fortifying body of the wine.  The Bartlett Pears are crushed, pressed and fermented.  Part way through fermentation, the mulberry/alcohol mixture is added  and the wine is fortified to 18%.  The sweet elixir is then aged for 18 months in 3 year old French Oak Barrels to soften the alcohol and integrate it with the fruit.  The result….. a very rich, extracted wine that shows aromas and flavors of Baked Figs and Christmas Spices.

Wine Makers Notes

The First year we opened, we made a Blackberry “Port Style Wine”  but the blackberries were sourced from the Fraser Valley.  I wanted to utilize a more local fruit and the Mulberry was the closest in comparison.  Most Berry wines add water for volume, and I wanted to build complex flavor so we used Bartlett Pear as the base.  The second vintage of this wine, I chose to dry the mulberries out to intensify the flavor even more creating the “Amarone”  Style.  Sometimes I find fortified wines too much like alcohol and fruit and that’s where the idea of aging in the older oak came in.  The result speaks for itself~
